GRAPEFRUIT BRÛLÉE

3/4 oz Grapefruit Vanilla Element Shrub
3/4 oz burnt caramel syrup*
1/2 oz fresh lime juice
2 tsp marmalade

Add all of the ingredients to a shaker with ice. Shake until chilled and until the marmalade is incorporated into the drink. Serve over clear ice.

*Creating bitterness in non-alcoholic drinks is always a challenge. Depending on how strict you are with booze it is hard to find concentrated bitters that are 100% alcohol free. SO, in lieu of bitters e are using a burnt caramel syrup. Here is how you make it:

  1. Add sugar to a sauce pan on medium heat

  2. Swirl it around to evenly melt sugar and keep cooking until sugar is a very dark brown

  3. Add water to sauce pan to dissolve sugar
